How do I treat the annoying flies that fly around the restaurant kitchens.? My customer is embarrassed by these flies.

For you to do any more than keep the place clean will likely require that you obtain a pest control operator’s license. Applying pesticides and chemical controls are licensed occupations in most areas.
However, making sure the screen doors are kept closed and hanging up flypaper is another matter. Anyone can do that.
Flies are attracted to garbage for feeding and some to water for breeding. Treat all floor drains with some bleach solution from time to time for drain flies. Keep food waste covered and garbage cans clean and odor free. Make sure opening windows have screens and that they fit well. Dumpsters should be well away from the building and also covered.
Remove grease and cooking oils from kitchen surfaces and keep food being prepared under cover. Taking these precautions, and using a flyswatter frequently, are the restaurant staff’s job and if they are not doing their job, your cleaning on off hours will not solve the problem.
