| I have some wood desks that have polish build up. What do you

I believe the best recommendation is to use a wood cleaner if you cannot buff off the excess polish with a soft cloth and some elbow grease.
Wood care folks such as Cabot, Minwax, and Scott's LIquid Gold make wood cleaners formulated to remove buildup without removing the finish. I suggest you try the product initially in a small area to see how it behaves.
